This cool cucumber yogurt salad pairs hydrating cucumber and crunchy onion with a fresh yogurt dressing of garlic, pepper, chilli flakes, lime and olive oil. Simple and refreshing, it makes a light summer side or an easy dish to enjoy after yoga practice.

Ingredients

  • 4 medium cucumbers, washed and thinly sliced
  • 1 onion, halved and thinly sliced (optional)
  • Fresh coriander leaves, chopped
  • 100 g yogurt (or regular curd)
  • 1/2 tsp salt
  • Freshly crushed pepper, to taste
  • 1/2 tsp chilli flakes
  • 1 garlic clove, grated
  • Juice of 1/2 lime
  • 2 tsp extra virgin olive oil (optional)

Method

    Thinly slice the cucumbers and transfer to a bowl. Slice the onion and loosen the layers.

    For the dressing, whisk the yogurt with the salt, pepper, chilli flakes, grated garlic, lime juice and olive oil until well combined.

    Add the sliced onion and chopped coriander to the cucumbers, pour over the dressing, and mix gently until everything is well coated.

    Serve chilled, straight away — the salad is best enjoyed fresh.

Can I make this salad ahead of time?
It's best assembled and dressed just before serving. Cucumbers release water and soften once dressed, so keep the components separate if prepping ahead and combine at the last minute.
Can I leave out the onion or olive oil?
Yes — both are optional. The salad works well with just cucumber, the yogurt dressing and coriander.
