Sattu Paratha (Stuffed Roasted-Gram Flatbread)

Sattu paratha is a hearty wholewheat flatbread stuffed with spiced roasted gram flour (sattu), fresh herbs and aromatics. A beloved recipe from Eastern India, it's high in plant protein, filling and full of flavour — a satisfying meal on its own.

Ingredients

makes several parathas
  • for the dough: 3 cups (250 ml) wheat flour (atta)
  • 1 tsp salt
  • 1 tsp ajwain (carom seeds)
  • 1 tsp kalonji (nigella seeds)
  • about 1/2 cup water (room temperature), as needed
  • for the filling: 1.5 cups sattu (roasted gram flour)
  • 2 medium onions, finely chopped
  • a piece of ginger, finely chopped (about 3 tsp)
  • 3 tsp garlic, finely chopped
  • 5 green chillies, finely chopped (to taste)
  • salt and spices to taste
  • oil or ghee for cooking

Method

    Mix the wheat flour with the salt, ajwain and kalonji, then gradually add water and knead for about 5 minutes to a smooth, soft dough. Rest it aside.

    For the filling, mix the sattu with the chopped onion, ginger, garlic and green chillies (and salt/spices to taste) into a moist, crumbly stuffing.

    Divide the dough, roll a portion, place a spoon of filling in the centre, seal and gently roll out into a paratha.

    Cook on a hot tawa, flipping and dabbing with oil or ghee, until golden on both sides. Serve hot.
